1 2-tablespoon clean medicine syringe (available at the local pharmacy)
A sharp, point knife
Fine mesh strainer

Ingredients

1 tablespoon of granulated sugar
1 pre-made, store-bought graham cracker or oreo crust (save the lid)
1/3 cup of cold water
1½ teaspoon of cornstarch
12 ounces of softened cream cheese
1½ cups of frozen or fresh raspberries
1 egg white
1 egg
1/3 cup granulated sugar
1½ teaspoon of lemon juice
1 teaspoon of vanilla extract
¼ cup of heavy whipping cream
1 cup of white chocolate chips or 6 ounces of chopped white chocolate

Instructions

1. Oven should be preheated to 325 degrees. Whisk together the cornstarch and 1 tablespoon of granulated sugar in a small saucepan until well blended. Stir the cold water in and add raspberries. Over medium heat, whisk frequently until the mixture is boiling. Let it gently boil for approximately 5 minutes, whisking constantly until the sauce has thickened. Take from stove top then force the sauce through the strainer into a bowl. This will remove seeds, set it aside.

2. Use an electric mixer in a large mixing bowl to beat the granulated sugar and cream cheese together for about 1 minute. Mix in egg and egg white. Add lemon juice and vanilla. Set aside mixture.

3. In a double boiler, melt cream and white chocolate until smooth or place in a microwave on 50 percent power at 30 second intervals, stir after every interval until smooth and melted. Add this mixture to the cream cheese mixture and blend together.

4. Stream 2/3 cup of cheesecake mixture into the preferred crust and evenly spread over bottom. Spoon or drizzle with 2 tablespoons of raspberry sauce. Ladle the remaining cheesecake mixture slowly over the raspberry sauce. Covering all the raspberry sauce, ensuring that it does not show through. Use the knife or toothpick to swirl cheesecake, ensure that for now, only the inside layer of sauce is being swirled, be cautious in not letting the sauce show through. Jiggle the pan carefully to level out the top. Fill the medicine syringe with the raspberry sauce and start piping small, swirly circles in a pattern on top of the cheesecake. Use the knife or toothpick and starting in the center, run the toothpick or knife through the middle of each heart, careful not to lift the tool out before finishing the last circle.

5. Place in the oven for 40 minutes. Turn off the oven and leave cheesecake to sit there for 5 additional minutes. Take from the oven and leave to cool. Use the saved lid to cover and refrigerate for approximately 6 hours or until fully set. Use remaining raspberry sauce to top slices and add whipped cream for even more decadence.
